poussins, 3, about 700 g (1.5 lb) each
salt and pepper
kumquats, 225 g (8 oz)
garlic cloves, 16
olive oil, 30 ml (2 tbsp)
unsalted butter, 25 g (1 oz)

dry cider, 450 ml (15 fl oz)
apple juice, 200 ml (7 fl oz)
double cream, 200 ml (7 fl oz)
